Coconut Vegetables over Rice

This was the first thing I made in my new kitchen!!
I got the basic outline of this dish from Apple Pie, Pastis & Pâté but I didn’t use shrimp paste or ginger or green beans. What I did do was so easy, delicious and filling that I will surely make variations on it again!

We made brown rice with a little bit of olive oil
Sautéed a chopped onion and a few cloves of garlic in a big pot with coconut oil
Chopped up 2 sweet potatoes, an eggplant, and a head of broccoli and added them in
Stirred in a can of coconut milk and a bit of water and simmered until the vegetables were soft
Added in my favorite spices: paprika, cumin, cayenne, coriander, and salt
Served it over the rice in my cute new bowls!
